Flynn got a haircut. or rather, a full-body buzz. He is so embarrassed. And we kinda are too.
My little sister decided she wanted to age another year, and turn 17 on Saturday. little does she know, that as soon as this year is over.... 18-21 {and possibly further, i wouldn't know yet} all kinda blend together. and before you know it, adulthood is smacking you in the face and you're and old married person going to bed at 9:30, and having to pay for things like interest on a mortgage. guh.
Steven talked me into riding along while he golfed with one of his buddies. Not gonna lie, the whole golfing thing never appealed to me. Trying to hit a ball into a tiny hole? boring. I'm more of a "smack-the-ball-as-hard-as-humanly-possible" kinda gal. The driving range is cool. or even better, hitting baseballs! yes. But playing nine holes.... bleh. no danke. So i sunbathed.
Can we talk about how amazing the weather was this weekend?? i kinda want to cry with joy. I almost forgot how much fun it is to be outside soaking up some vitamin D. We took our pups to a little park in Salt Lake where they can run and play with the the other dogs. Graham lovvved it. Flynn... was a little more hesistant. I think after three retrievers ganged up on him, he was a little freaked out. So he spent the rest of the outing refusing to be set down.

Lucky for us, we are only three days away from our next weekend. We are heading south again for a little sunshine and adventure :) I know, we are partyers. And it rocks.
My husband is a picky eater. Not to any extreme extent, but finding meals that we both love AND are healthy AND easy-ish... is kinda difficult. Thank goodness for pinterest! I probably spend wayyy too much time looking at food on there though.
Behold! The beef and bean enchilada casserole!
Husband rates this a ten. That's unheard of, p.s.
So naturally, I must share to all the other wives of picky eaters.
Ingredients:
3 oz. ground beef
¼ cup dried onion
¾ tsp chili powder (I used chili peppers… the little
round flakes?)
¾ tsp cumin
one 15 oz can pinto beans (drained)
one 4 oz can diced green chili peppers (I only put in
half because we are spicy weaklings)
¾ cup sour cream
1 ½ Tbs. flour
¼ tsp. garlic powder (I just used normal garlic)
three 6 in corn tortillas (I used two 12in flour ones)
one 10 oz can enchilada sauce (we used the mild –
original kind... and only about 3/4 the can)
½ cup shredded cheese (i used a little more than that on his)
1.Spray 9x13
pan. Preheat oven to 350 degrees. In skillet cook onion and beef, drain fat.
Stir in chili powder and cumin. Stir in pinto beans, enchilada sauce, green
chilies and half of the cheese. Set aside.
2.In small bowl
stir together sour cream, flour and garlic powder.
3. Spread sour cream mixture onto tortillas. Top with meat mixture and cheese. Roll tortillas and
place in pan. Top with enchilada sauce, remaining meat mixture, and sour cream.
I have a thing with adding vegetables to all
recipes. So before I put it in the oven for the last five minutes, I cut
up and added a tomato, half an avocado, half a green pepper, and a couple green
onions and put them on the top. I Think it really made a difference!
4.Bake 30 minutes. Uncover and sprinkle with cheese (and vegetables if you so desire). Bake 5 more minutes.
Disclaimer: All measurements, amounts etc are just approximations. Most the time I don't even measure it. That's the beauty of this recipe, you can make it just how you like it and it still turns out. I've used taco seasoning on the meat instead of the spices, added green onions, black beans instead of pinto, used wheat tortillas, made my enchilada vegetarian, you could use cooked chicken instead of beef... the list goes on and on.
In other news, we have taken a liking to staying on the phone/face-timing for hours whilst I'm dead bored at work, and he is home without me. You know that office episode where Pam is in NY and she and Jim get the microscopic bluetooths and stay on the phone all day long and Dwight thinks Jim is going crazy because he keeps talking to himself, but he is really just talking to Pam? Yeah same thing. People think I'm just listening to music on my ipod, when I'm really listening to Steven singing on the other end. Awesome.
Steven is spoiled. That is all. But who could say no to that face?

Did I ever tell you how much I love Saturdays? Especially Saturdays that Steven is home, and not working? I love them. Those days we should probably spend doing the deep cleaning, laundry, dishes, replacing tires, and other boring thing... but we are cool. And like to not do any of them. Instead, we spend the whole day together. And I don't know about you, but I think that's wayyyy better then laundry.
Steven had to take a psychology test up at Weber State in the morning, so Flynn and I decided to tag along. I took Flynn out to play in the sun while we waited and oh my, does that poochie love to run. He spent a good twenty minutes just running full speed up and down the hill. Sometimes I think we should have named him Flash. Or Dash.

In the afternoon we went to go see Beauty and the Beast with Aimee. We might have been the only people in the theater without little kids, but who cares right?? It's a classic!
We decided that eating Cold Stone for dinner that night would be more than appropriate. After all of our healthy eating, we deserve a few thousand extra calories of sugar on the weekends. Right? Especially if those calories are mint chocolate chip and brownies. Steven was so excited.
After "dinner," we headed to Boondocks to use our free bowling passes. We won't talk about how that game turned out. But for the record, my finger grip hole thingy's were much too small. You think they would make a 6 pound ball for adults.
And of course, there was lots of puppy snuggling and watching of The Office. I officially have Steven addicted, and he swore he would never watch it! But now, he thinks it's the funniest show ever. Because it is. It goes to show even the biggest haters can be converted.
Also, I may have watched Justin Bieber's movie on Netflix. Twice. I use to be a major hater, and now I have the fever. I even leave it on for Flynn when we leave.
Good ol' Netflix. It's pretty much changing lives.
So remember when the house we bought was siiiccck nasty??
Like tabacco spits in the grout, red- haired beard shavings in the bathroom crevices, carpet stains from who knows what, fist punched doors, beer and katchup splattered walls, and a micowave, toliet and oven that hadn't been cleaned EVER kinda-nasty?
Yeah me too. Barf.
With A TON of help and many many hours deep cleanin' and scrubbin'... it's starting to look like a home.
Steven and I both wholeheartedly agree that KSL classifieds is the 3rd best thing of all time. Right after Disneyland and puppies of course. If it weren't for KSL, we wouldn't have ANY furniture. But luckily we got a steal of a deal on so many things! Actually, we literally did on our fridge. We might have stolen it from some African ladies in Rose Park. Unintentionally of course, and we drove straight back with the money.. but still. Basically though, KSL is heaven sent.

These pictures just don't do justice to the bathroom's night and day difference after a full scrub down. Before.. when you walked in there you could feel things crawling on you. I'm convinced it was the mutated bacteria growth from the many years of non-cleaning.
Our baby boy is just growing up to fast! He has slowly become a toddler the past couple weeks, but the good news is... he is learning how to potty in his litter box! Hurray!! He is only waking us up 2-3 times a night! We are such proud parents.
After watching this video I realized something. Steven and I have become one of those people. The people who totally act like their pet is their child. Dressing them up, showing off their pictures, and taking them EVERYWHERE.
(i.e. grocery shopping, movie theater, chili's, the christmas carol play... you get the drift)
But you know what? We are not ashamed.
We took Flynn over to my parents house to meet his Uncle Chuck. But aparently, Uncle Chuck is not too fond of children. And when I say children, I mean puppies.
Last night we got to go up to "This is the Place State Park" for my work party. Steven was foolish, and didn't bring a coat. Even though I specifically told him to dress warm. It was kind of a chilly night to be wandering around a pioneer village without an eskimo suit.
Best part of the night by far though, was when Steven heard Santa Clause was there. He basically ran the whole way. Almost as fast as I ran to the cookies and hot chocolate. (Even if he says it's just because he "was cold"... uh huh. Sure it was.) And it got even better. When we ran up the stairs, no one was there. We might have stood there awkwardly for a couple minutes before Steven asked if he could sit on his lap. Or he asked if I could sit on his lap... I don't remember. Either way, I wasn't going in there alone, so I took him down with me. Poor Santa.
I must really love you Steven.
But I also think you owe me a bag of almond hershey kisses for that one.
I love eventful weekends. Actually, just weekends in general.
For all those non-utahn-davis-countyer's... you shoulda seen the storm that hit us Thursday!
106mph winds. For reals.
It went all through the night and I'm pretty sure no one slept.
We woke up to no power, but figured to go about our day normally anyways.
On the way to work, Steven almost had his car door ripped off it's hinges at the gas station, and watched a man get blown over while crossing the street. Crazy!
I got ready in the dark, and decided no shower was way better then a cold shower.
When I tried to open the garage to leave to work... it wouldn't open. I smacked myself on the forehead for being so silly in thinking it would while the power was off.
I pulled out my phone to call someone for a ride, then come to find it was dead dead dead because I hadn't charged it at night. I was stuck. No car, no phone, no internet, and no food.
As a last effort, I went outside and clinged to the walls to knock and see if any of might neighbors were home. No dice.
I went back inside my freezing house, lit the leftover tea lights from the wedding, and finally gave into the massive pile of thank you notes still needing to be written. I wrote until my fingers froze up, then crawled into bed defeated. Basically, I don't know how the pioneers survived. And I'm a total wuss when it comes to the cold.
Steven came to my rescue at lunch after he couldn't get a hold of me all morning. I spent the rest of the day at my in-laws house keeping warm by the fire with family.
The damage that the wind had caused was unreal. Power lines hanging all over, massive trees ripped right from the ground, fences blown to shreds, debris and shingles everywhere...
I'd never seen anything like it.

After spending an entire morning alone in a big empty house, I decided I needed a dog before another natural disaster hit. Long story short, we weren't planning on getting a dog till Spring. But one thing led to another and we ended up finding our dream puppy, and we were smitten.
This is our sweet boy, Flynn Rider. He is a 7 week old yorkie mix and will get to be about 5lbs. He just wants to be held and cuddled all the time and cries whenever he isn't close to us. We can't believe how much personality he has already, and how crazy smart he is. He is so so fun and too stinkin' adorable. And he loves his daddy :)
